Master essential business strategies and practical management insights for CACH BAO QUAN VA XU LY DO AN THUA SAU TET. Exclusive guide by Safe King consulting team.

Together with Safe King_, please refer to the food preservation methods below:

1.     Cake, jam, candy

After Tet, cakes, jams, and candies should be stored carefully to avoid mold. You should put cakes, jams, and candies in sealed bags, it is best to use tin foil bags. Or you can buy vacuum-sealed glass jars to preserve, helping the confectionery not absorb moisture and retain its crispness and original state.

In particular, for dry jam, when Tet is over, you should put it in a clean, dry glass jar and cover it with a layer of white sugar. The white sugar layer has the effect of absorbing moisture, keeping the jam always dry and clear in color. With wet jams like kumquat jam, persimmon jam... you should boil a little sugar water and then transfer the jam until it dries and can be stored.

2.     Cooked foods

Traditional foods (spring rolls, spring rolls, stir-fried sausages, spring rolls, banh chung, banh tet...) are often bought by people before Tet for storage, so if there are leftovers after Tet, they should be carefully preserved because the weather is getting warmer so these foods are easily damaged.

For banh chung, you should store it in the refrigerator, cut it as you eat, and cover the rest with plastic wrap. When taking the cake out of the refrigerator, you need to boil it, steam it or fry it before eating.

For cakes with white mold or fermentation with a sour smell (especially in the corners of the cake) on the outer crust, you must cut off the fermented or moldy part and only use the undamaged part.

There are many types of sausage: silk sausage, beef sausage, tai sausage, stir-fried sausage... all should be kept at a temperature below 25 degrees Celsius for preservation.

When properly stored, sausage will keep for 4-6 days if kept in the refrigerator, and can even be kept for about 10 days if kept in the freezer. With frozen meat, you should divide it into small boxes, just enough for each meal to store in the refrigerator.

3.     Foods to eat on the same day

Because every family eats many dishes on Tet, preserving food properly during the day is very necessary. For foods eaten during the day depending on weather conditions, we should not leave cooked food in a normal temperature environment for more than 2 hours.

Food left over after a meal should be reheated, cooled, and then placed in the refrigerator.

If food is still hot, put it immediately in the refrigerator, where the temperature is low, the food will degenerate, the water in the food condenses into steam, promoting the growth of harmful bacteria, leading to food poisoning.

When eating, you must recook food before using because the temperature in the refrigerator only limits the growth of bacteria but cannot destroy it.

4.     Fresh food

Vegetables and fruits left over after Tet, this is a very perishable fresh food. If you want to preserve it for a long time, you should not wash it but pick out rotten leaves, bruised leaves, damaged parts, cut off the roots and put them in a cool place. If putting in the refrigerator, wash the vegetables, drain them and put them in a sealed foam bag, put the bag in the refrigerator (5 degrees Celsius).

Same for fruit, wash and drain. Then wrap it in newspaper and put it in a sealed bag before placing it in the refrigerator for storage. Wrapping in newspaper will help the fruit stay fresh longer and prevent it from over-ripe.

5.     Frozen foods_

Due to the fear that after Tet many foods will be expensive, many families have stored frozen meat, shrimp, fish... from before Tet, so after Tet some of this food may be left over. With frozen foods, you should only defrost an amount of food that is enough to eat, not defrost the entire thing. In particular, meats must be used up when defrosted and should not be frozen again, causing bacteria to enter

When preparing frozen foods, you should use foods purchased first, then foods purchased later. Avoid leaving frozen foods for too long, cooking will no longer be delicious and nutritious.

6.     Clean the refrigerator regularly

Fridges used to store food are also places where extremely high amounts of bacteria accumulate. Therefore, cleaning and cleaning the refrigerator regularly will create a well-ventilated environment to prevent bacteria from accumulating and causing food spoilage, leading to negative impacts on family health.

After cleaning, use vinegar and lemon juice to deodorize the refrigerator. Do not open the refrigerator door when not necessary because it will make it easier for outside bacteria to penetrate the food inside the refrigerator and waste electricity.

With the above food preservation methods, we hope to help housewives to preserve the best food.
